Thanksgiving Tips & Kudzu

If your'e anything like me, right about now you are gathering recipes and making grocery lists in preparation for Thanksgiving.  

 

So, here are some tips to help you cook a healthy meal this holiday, without sacrificing flavor. And don't miss the next New Food Challenge!

Tip #1: Use kudzu to thicken gravy, sauces, pie filling, etc.

Kudzu makes a great substitute for corn starch or refined white flour (which lack nutritional value) as a thickener. See the New Food Challenge below for tips on how to use Kudzu this Thanksgiving.

 

Tip #2: Before eating, take a few deep breaths and give thanks for the delicious food you are about to enjoy.

Thanksgiving can come with stress, which inhibits proper digestion. So, this ritual can help you relax and prepare your body for all that yummy food! 

 

Giving thanks and really thinking about how all the food came to be on your table is another great exercise.  Each ingredient had quite a journey before becoming part of your meal and each delicious recipe was lovingly prepared. 

 

Tip #3: Substitute whole grains for refined flours, wherever possible.

Refined carbohydrates are not your friend (and along with Tryptophan in your turkey, they can make you feel very sluggish). Replacing white flour with whole grains like brown rice or oats, can be just as satisfying, but they provide important nutrients and fiber.

 

Tip #4: Eat slowly & chew your food thoroughly.

We tend to forget that we are even eating when engaged in conversation with friends and family. This Thanksgiving, try to eat more mindfully. Being aware of what you're eating and taking your time allows you to really savor the food.

 

Tip #5: Watch those portion sizes.

The holidays are notorious for weight gain, because we tend to overeat and throw caution to the wind.  I encourage you to indulge in all the foods you enjoy, because Thanksgiving should be a joyful celebration that is free of guilt.  So, load up on salad and vegetables, but go easy on the pie. 

 

Tip #6: Remember, it's all about friends & family.

At the end of the day, Thanksgiving is about sharing time with friends and family and expressing gratitude. Try not to get caught up in the stress of traveling or preparation. Just be in the moment.

Kudzu

 

(also spelled Kuzu)

 

 

Kudzu is a wild Japanese root also known as Pueraria lobata.

 

Possible Benefits of Kudzu:

Soothes intestines

Reduces cluster headaches

Decreases desire for alcohol consumption

Alleviates symptoms of Menopause

Helps manage metabolic syndrome (which is associated with diabetes, obesity, high blood pressure. high cholesterol, insulin resistance & heart disease)

 

 

How to Use Kudzu: Mix equal parts kudzu and COLD water to create a slurry. Then, add to your gravy, sauce or pie filling, whisking constantly. Stir until your product thickens and simmer for 1-2 minutes. Use 1 Tablespoon to thicken 1 Cup of liquid. 
It's as simple as that!

 

Note: It's important to check with your physician before implementing kudzu as an herbal supplement (it should not be used in conjunction with anti diabetic medications or tamoxifen).
