Curious about Beets?

A client of mine recently inquired about the nutritional difference between yellow and red beets. I thought I'd share my response with you, just in case you're curious, too.

For the most part red and yellow beets are very similar in nutrient content, with the only major difference being their pigments. However, the pigments themselves contain compounds that have slightly different benefits. The yellow beets contain more lutein and zeaxanthin, which are important for eye health, while the red beets contain more betalains that are antioxidant-rich, anti-inflammatory and promote detoxification.
