If Chicago can dye its river green for St. Patrick's Day, why not dye bagels to honor the Emerald Isle on St. Patrick's Day?
That's what Mark Piazza has done, for the last seven years he's owned Steve's Bagels.
He expects to sell 80 dozen colored bagels this weekend—that's about half the number of bagels he sells on a typical Saturday or Sunday, rendering them a popular choice for Ridgefielders this time of year.
Piazza, a Stratford resident, bought the business in 2006 but retained the name because of the success his predecessor had for 17 years (Steve's Bagels won the Ridgefield Patch Reader's Choice Award in 2012, by the way).
Asked about the secret of his success, Piazza said it was a good business to be in.
"People like bagels—it's a fast breakfast and it's inexpensive," he said.
